Avocado Tofu Pudding: ¿Que es Tofu?

This is a recipe for an Avocado Tofu Pudding. I know what you’re thinking, “But, Latinos don’t eat tofu.” Whhaaatttt?!

Of course we do! I love sautéed tofu with nopales in a red chipotle sauce. Or mixed in with esquites. *Drool* Soyrizo, it’s the same thing, right? Tofu tacos. ¡Órale! Grilled tofu…it’s like asada. And don’t forget my Mexican chocolate tofu pudding. Delish. One of the great things about tofu is that it is a blank slate as far as flavor goes, and it can be seasoned just like carne asada, al pastor, adobada and yes, it’s great in stir-fry too

And since making tofu pudding is my favorite dessert hack, here is one more easy pudding recipe to get you excited about using tofu: Avocado Tofu Pudding. I sweetened the pudding with banana and dates. That did the trick…but feel free to sprinkle in some Splenda, or other sweetener of your choice. You can also just add more dates or serve it with some ripe, seasonal fruit. And it’s great with whipped cream too! Lightly sweetened, of course. What else would you add to your pudding? Sweetened coconut? Cocoa powder? Chia seeds? Why not?!

Keep in mind that avocados have naturally good fats and are cholesterol free. Tofu has a ton of health benefits…don’t believe me? Just Google it and you’ll find tons of information. Tofu is a complete protein that enables better regulation of sugar levels, so you’re not too sweet. Since diabetes is especially pervasive in the Latino community, and mine, it’ll be a good thing to start incorporating more avocados and tofu into our diets. Who’s down?

Avocado and Tofu Pudding

Avocado Tofu Pudding
Serves 4

Ingredients:
1 14 ounce package soft tofu
1 large ripe avocado, peeled pitted
1 ripe banana, peeled
4 dates
Splenda to taste

Procedure:
1. Working quickly to prevent the banana and avocado from browning, puree all the ingredients in a blender until smooth.

2. Place in a bowl and cover with plastic wrap, making sure the plastic is touching the tofu pudding. This will prevent it from browning or from forming a skin. Allow it to chill in your refrigerator for at least 30 minutes before serving.

3. Garnish with berries or slices of bananas. Enjoy immediately!
