Tri Tip Tacos with Corn Pineapple Salsa

For this recipe below for Grilled Tri Tip Steak we used Tastefully Simple’s Ultimate Steak Seasoning and Avocado Oil

Simply rub avocado oil onto the entire steak. Generously add the Ultimate Steak Seasoning on both sides of the steak. Place in a container and cover to marinate for at least three hours, overnight is preferred. Bring out the steak and let it come to room temperature before grilling, about an hour.  Grill as you would normally do for a Tri Tip Steak. Here is what the NY Times Cooking site recommends for method and timing.

Here is the delicious Corn and Pineapple Pico de Gallo Salsa. The sweetness of the pineapple countered the heat of the Serrano peppers heroically. This pico de gallo could stand up to beef, fish, chicken and even pork. We are definitely going to make this a staple in our home this summer.

Yield: 4 cups

Corn and Pineapple Pico de Gallo Salsa

A chunky Pico de Gallo salsa made with grilled corn and pineapple.

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 2 grilled ears of corn
  • 1 cup grilled pineapple, diced
  • 3 tablespoons chopped cilantro
  • 1/2 red onion, diced
  • 3 tablespoons Tastefully Simple Avocado Oil
  • 2 Roma tomatoes, diced
  • 1 lime, juiced
  • Salt and Pepper to Taste

Instructions

  1. In a medium bowl, mix all the ingredients and stir well.
  2. Place covered in the refrigerator for at least one hour before serving.
