The holiday season is in full swing, and that means it’s time to share one of our absolute favorite recipes with you all – Camotes Enmielados.
The kitchen is filled with the warm, comforting aroma of cinnamon, star anise, cloves, and the rich sweetness of piloncillo (brown sugar).
INGREDIENTS
4 medium-sized sweet potatoes, peeled and washed
2 piloncillo cones
2 star anise (whole)
3 whole cloves
2 cinnamon sticks
6 cups of water
1/2 teaspoon of salt
DIRECTIONS
In a medium pot, add all the ingredients except for the sweet potatoes and bring to a boil.
Add the sweet potatoes, and bring the water to a gentle simmer. Cook for about 30 minutes until the sweet potatoes are fork-tender and the sauce begins to thicken like syrup. Be careful not to overcook as they will start to get mushy.
Remove the cinnamon sticks, cloves and star anise.
Serve in a bowl with the thick syrup. Add milk or heavy cream (optional).
